To prepare the pasta:

· 120 g uncooked pasta (about 240–250 g cooked weight)
· 1 teaspoon salt
· Drain the pasta water
For cooking:
· 2 teaspoons of olive oil
· 4 cloves garlic, minced
· 1 medium onion, chopped
· Chopped celery
· Chopped carrots
· 400 g lean ground beef (5% fat) (high-quality lean beef)
· 2 tablespoons tomato paste
· 1 can chopped tomatoes (400 g)
· Season with 1–2 teaspoons salt
· 1 teaspoon black pepper
· 1 tablespoon basil
· Add ½ cup pasta water
· Cover and let it simmer for 8–10 minutes.
· Garnish with Parmesan cheese and basil (10 g Parmesan per serving).
