🛒 Ingredients

  • 2 large eggs
  • 4 chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Ranch Dip

  • ½ cup cottage cheese
  • ½ cup sour cream
  • ½ teaspoon dried chives
  • ½ teaspoon dried parsley
  • ½ teaspoon dried dill
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Method

Step 1 – Preheat the oven to 450°F (230°C).

Step 2 – Prepare two coating bowls:

  • Bowl 1: ½ cup flour and eggs
  • Bowl 2: mix remaining flour, panko breadcrumbs, salt, and pepper

Step 3 – Using a meat mallet, flatten each chicken breast to about ¼ inch thick, then cut into 2-inch strips.

Step 4 – Bread the chicken in this order:

  1. Dip the chicken in flour and egg mixture
  2. Coat in the breadcrumb mixture, turning to cover evenly

Step 5 – Place the chicken strips on a baking sheet and bake for 20 minutes or until golden brown and fully cooked.

Step 6 – While the chicken cooks, prepare the ranch dip. Add all dip ingredients to a food processor and blend until smooth. Cover and refrigerate until ready to serve.


Tips

  • Prepare your favorite herb and spice mixes in advance for faster cooking.
  • Leftover dip can be served with fresh vegetables.
