🛒 Ingredients
- 2 large eggs
- 4 chicken breasts
- 1 cup panko breadcrumbs
- ½ cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon black pepper
Ranch Dip
- ½ cup cottage cheese
- ½ cup sour cream
- ½ teaspoon dried chives
- ½ teaspoon dried parsley
- ½ teaspoon dried dill
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Method
Step 1 – Preheat the oven to 450°F (230°C).
Step 2 – Prepare two coating bowls:
- Bowl 1: ½ cup flour and eggs
- Bowl 2: mix remaining flour, panko breadcrumbs, salt, and pepper
Step 3 – Using a meat mallet, flatten each chicken breast to about ¼ inch thick, then cut into 2-inch strips.
Step 4 – Bread the chicken in this order:
- Dip the chicken in flour and egg mixture
- Coat in the breadcrumb mixture, turning to cover evenly
Step 5 – Place the chicken strips on a baking sheet and bake for 20 minutes or until golden brown and fully cooked.
Step 6 – While the chicken cooks, prepare the ranch dip. Add all dip ingredients to a food processor and blend until smooth. Cover and refrigerate until ready to serve.
Tips
- Prepare your favorite herb and spice mixes in advance for faster cooking.
- Leftover dip can be served with fresh vegetables.
