Makes 6–8 tacos, depending on how much filling you add to each taco.
🛒 Ingredients
Chicken Marinade:
- 300 g chicken breasts, cut into halves
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon mixed herbs
- 1 teaspoon chili flakes
- 1 teaspoon salt and black pepper
- 1–2 teaspoons olive oil
Vegetables:
- ½ red bell pepper and ½ green bell pepper, chopped
- 1 red onion, chopped
- Half the amount of the spices used for the chicken
- 1 can chopped tomatoes
- ¼ cup water
For the Tacos:
- White or yellow corn tortillas (the brand I use is Mission)
- 10 g shredded mozzarella cheese per taco
Garnish with fresh coriander (cilantro) and lime.
Method
Step 1 – Cut the chicken breasts into halves first. Season with the spice mixture and a little olive oil. Mix well so each piece is evenly coated. Add more seasoning if needed.
Step 2 – In a bowl, add the chopped red onion and bell peppers. Season them with the same spices used for the chicken but in half the quantity.
Step 3 – Heat a pan over medium heat, spray with oil, and cook the chicken for about 5 minutes on each side. Once cooked, set it aside and shred it using two forks.
Step 4 – In the same pan, add the vegetables and cook for 1 minute, then add the chopped tomatoes and ¼ cup water. Add the shredded chicken and mix well.
Step 5 – Take a tortilla, dip it in the chicken mixture, then place it in a separate pan. Add the filling and shredded cheese, fold it, and toast each side for about 1 minute. Serve with fresh coriander and lime.
